Chipotle Turkey Chili Recipe

Well it’s the 5th day of the New Year, how many resolutions have you broken or almost broken?  I just gave up making resolutions, made me feel too guilty when I didn’t keep them.

I wanted to post the chili recipe I referred to in my last blog, it’s really good, quick and easy to make.  I made a few changes to the original recipe, but you can make it either way.  We prefer a thicker tomato based chili, whereas the original version is more a soup base.

Chipotle Turkey Chili (original recipe is from Betty Crocker)

¾ lb lean ground turkey (I usually us 1 lb)

1 med chopped onion ½ cup (I use onion powder, 1-2 tbsp)

1 tbsp finely chopped garlic (I use garlic juice, 1 tbsp)

1 cup frozen whole kernel corn, thawed (I used the canned corn)

1 can (15 oz) cannellini beans, undrained (these are white kidney beans)

½ chicken broth

¼ teaspoon salt (I use Sea Salt)

1 chipotle chile in adobo sauce (from 7 oz can), finely chopped **

                **this can be found at Harris Teeter, I used the whole can (use can use just one chile), and after it simmered I removed the peppers and added in the tomato paste to thicken and reduce the spicy flavor**

1 can tomato paste (med size can)

½ cup reduced fat sour cream

½ cup chopped fresh cilantro (I didn’t use this ingredient)

1/3 cup shredded cheese (you choose, I used Colby-Jack)

Brown the turkey; drain then add onion and garlic

Stir in corn, beans, broth, salt and Chile.  Heat to boiling, reduce heat cover and simmer 10-15 minutes; stir occasionally.

I remove the Chiles at this point-you decide if it’s too spicy, then I add tomato paste.

Stir in ¼ cup of sour cream and cilantro.  Use remaining sour cream and cilantro when served; top with shredded cheese.  This will make about 4 servings of 1 ½ cups each.

This is a great simple recipe that can be made ahead of time or just before the game, it shouldn’t take more than 30 minutes from start to finish.  I usually keep a lot of spices on hand so that I don’t have to worry about picking up fresh garlic, onions, etc.  If you try the recipe, please let me know what you think and if you added or changed something that works better for you.  I’ll have more ideas and recipes as well as hints for shopping healthy in the coming weeks so be sure to check back.
